(1) Art Project - Paperfolding for Peace

Based on the story of Sadako Sasaki, who made the Japanese paper crane famous as a symbol of world peace, volunteers in Houston offer "peace workshops" each year to tell Sadako's story and to teach children how to paperfold Japanese cranes. The paperback "Sadako and the Thousand Paper Cranes" by Eleanor Coerr can be ordered online for about $5 and has instructions in the back on how to fold a paper crane.
Since it is near Christmas, you could work with students in a school to fold cranes by cutting squares out of wrapping paper, attach a wish or prayer for peace, and decorate a tree.
(2) Community Project -- Minting your own Money
Ithaca NY developed a system of barter coupons that can be used locally as legal tender. For a small fee, the founder will send you a sample kit and instructions on how to print your own money coupons and involve community members and businesses in trading them to promote your local economy.
There are certain rules to make it legal: that the coupons are only valid within a certain region, they have to be smaller in size than a dollar bill, and larger in denomination, and transactions still incur tax as if regular money were used.

You can take this on as an educational project with a local community center or school, or have children design the bills with pictures of local leaders.
(3) Letter writing project -- Thanks to the Troops
If you don't have much time to volunteer, you could spend a day passing cards around a college student center or a children's activity center, collecting signatures to send greetings to the troops overseas during the holidays. Your local USO should be able to help you, or they probably have their own phone card drives or need volunteers to put together care packages.

you didn't mention your level of education .so it is inappropriate to answer this question . yet there are plenty of stuff out there to do for every discipline ....one of which is to make a record of your cities transportation system and give your advice for its improvement in every aspect .
