I had some leftover ravioli (cheese) with eggplant parmesan tonight. Here are some more ideas:

Meatball Ravioli With Italian Salad
Serving Size : 4

Meatball Ravioli
1 tablespoon extra virgin olive oil
32 frozen meatballs (2/3 bag)
1/2 cup diced onions
1 tablespoon roasted garlic
1 (26-ounce) jar tomato basil pasta sauce
2 cups water
1 (9-ounce) package refrigerated four-cheese ravioli

Preheat large saucepan on medium-high heat 2–3 minutes. Place oil in pan; swirl to coat. Add meatballs, onions and garlic; cook 3–4 minutes, stirring occasionally, until onions begin to brown. Stir in remaining ingredients. Bring to a boil and cook 12–14 minutes, stirring occasionally, until pasta is tender and sauce begins to thicken. Serve.

Italian Salad
1/4 cup quartered artichoke hearts
1/4 cup roasted red peppers
1 cup grape tomatoes
1 (10-ounce) bag European salad blend
1/4 cup sliced green olives
1/2 cup seasoned croutons
1/4 cup balsamic vinaigrette

Dice artichokes and peppers. Slice (rinsed) tomatoes in half.
Place salad blend, tomatoes, olives, artichokes and peppers in salad bowl. Chill until ready to serve.. Add croutons and dressing; toss and serve w garlic bread.

Shrimp & Ravioli

1 tablespoon butter or olive oil
1/2 teaspoon grated lemon peel

1/2 pound peeled and deveined medium raw shrimp

Prepare ravioli as directed on package. Rinse and drain; set aside.

Combine butter, lemon peel and basil in shallow 1 1/2–quart microwave–safe baking dish. Microwave on HIGH 45 seconds to 1 minute, or until butter is melted. Add lemon juice. Mix well. Add ravioli and shrimp. Toss to coat. Cover baking dish with wax paper. Microwave on HIGH (100% power), stirring once, 3 to 4 minutes more or until shrimp is opaque in center.

It depends, if you are serving with marinara sauce I would do caesar salad and garlic bread. If you are serving with alfredo sauce I would do steamed broccoli or asparagus and french bread.
