A simple recipe will do cuz that is all i will prolly do tonight. THANK YOU!!

Basa Fillet with Cajun Veggies
vegetable cooking spray
2 medium basa fillets
salt & fresh ground pepper
1 (14 ounce) can stewed tomatoes
1/2 sweet green pepper, cut in large chunks
1/2 red onion, cut in large chunks
1/2 medium cauliflower, cut in large florets
2 teaspoons cajun seasoning, divided
Rinse and dry the basa fillets on paper towel, sprinkle with 1 teaspoon of the cajun seasoning and salt and pepper, spray both sides with veggies spray, set aside.
Spray a large non stick frypan with veggie spray; add green pepper, onion, cauliflower, and sprinkle with the other teaspoon of the cajun seasoning, stir fry for 3 minutes; add stewed tomatoes, place a lid on the frypan and simmer for 5 minutes.
Move the veggies around the edges of the frypan and place the basa fillets down the middle. Spoon some of the veggies and juices over the fish. Replace the lid and simmer for 5 to 10 minutes depending on the thickness of the fish or until the fish flakes easily. Serve over rice or with baked potato.

Basa Fillets are one of the best, inexpensive mild white fish I have ever had. I eat alot of fish and enjoy this fish. Try this recipe. I usually bread my fish and fry it which can be done in a skillet. First dredge your fish in a flour mixture of flour, salt, pepper and garlic powder. Then dip in a mixture of egg beaten with a little bit of water. Then dip your fish in a mixture of bread crumbs, salt , pepper and garlic powder. Remember you can add whatever spices you like but don't over power the fish. You want to taste the fish. I then fry the fish in a small amount of oil for 3-4 minutes per side. I usually deep fry my fish but it has been done in a skillet in the past. I hope you try this recipe, it is really tasty. Many times after frying this we put it on a bun with hot sauce or tarter sauce. Dress the sandwich however you would like. Try it, you will like it.
