First a typical Spanish drink to get you in the mood for this adventure.
Sangria
Ingredients:
1 bottle burgundy
1/3 cup sugar
1/3 cup lemon juice
1 ounce Triple Sec
2 ounces brandy
1 orange, thinly sliced
1 lemon, thinly sliced
Procedure:
Combine first five ingredients and chill well. Add fruit slices before serving.
Cherrystone Clams in Sherry
Ingredients:
3 tbsp. olive oil
1/2 medium onion, chopped finely
1/3 cup of diced ham
1/2 good quality Spanish Sherry
2 dozen littleneck clams
Parsley, freshly chopped
Procedure:
In a pan large enough to hold the clams, heat the olive oil and sauté the onions until tender.
Add the ham, sherry and clams and cook over high heat until the clams open.
Remove the clams as they open to serving dishes. Place 3 clams on each dish, top with the hot sauce and a sprinkle of parsley.
This one is a little messy and you may want to serve with forks.
Tuna and Olive Crostini
Ingredients:
12 (1-inch) slices of a French baguette
Drizzle of olive oil
1 (8-ounce) tuna steak
Salt and pepper
1/2 cup Kalamata olives, about 20, pitted
1/2 anchovy fillet
1/2 teaspoon chopped garlic
2 tablespoons extra virgin olive oil
1/4 teaspoon freshly ground black pepper
Procedure:
Preheat the oven to 350 degrees. In a mixing bowl, toss the bread slices with olive oil, coating each side completely.
Season the bread with salt and pepper. Place the bread on a baking sheet and bake until crispy and slightly golden brown, about 6 to 8 minutes.
Remove the croutons from the oven and place on a large plate. Season the tuna steak with olive oil, salt and pepper.
Place the tuna on a hot grill and cook for about 2 to 3 minutes on each side for medium-rare.
Combine all of the remaining ingredients in a food processor and purée for 15 seconds or until the mixture is smooth.
Slice the tuna into 12 equal slices and place one slice on top of each crouton. Dab a spoonful of the Tapenade on top of each tuna slice.
Garnish with chopped chives.
Yield: 1 dozen crostinis
Bacon Wrapped Mushrooms with Basil Mayonnaise
1/8 cup red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons garlic, fresh minced
1 teaspoon basil, fresh leaves, chopped
1/2 cup olive oil
3 tbsp. olive oil
Salt and pepper
3 basil leaves, chopped
1 clove of garlic, chopped
2 dozen medium white mushrooms, whipped clean, stems removed
12 pieces of thin bacon
Instructions:
Make the Mayonnaise at least 4 hours before serving.
To make the mayonnaise: Combine the vinegar, mustard, basil and garlic in your blender and pulse a few times. Turn on high and slowly add the oil until it is blended well.
It should be thick like a mayonnaise.
Season with salt and pepper if desired. Chill. Serve on the side in a little ramekin for dipping. Great spread for small turkey sandwiches too!
Preheat over to 375 degrees
Combine the oil, a little salt and pepper, basil and garlic in a bowl. Toss in the mushrooms and stir to coat. Allow to sit in marinade for 20 minutes.
While the mushrooms are bathing, cook the bacon to about half done and remove to paper towels to drain.
Cut the slices in half and proceed to wrap the bacon around the mushrooms, securing them with toothpicks.
NOTE: If you want to step this preparation up just a notch, put a half a leaf of basil between the bacon and mushrooms when wrapping them.
Put the wrapped mushrooms on a cookie sheet and cook for 8-10 minutes until bacon crisps and mushrooms are tender.
Allow to cool a little before serving as the mushrooms have a lot of liquid in them that could burn your chin!

I have a recipe for molten chocolate cakes. You bake them in cupcake molds.
1# dark choc
1# butter
9 eggs
6 egg yolks
8 oz flour about 1 cup
6 oz sugar a little more than 3/4 cup
Melt choc and butter together until smooth and set aside
Then mix the eggs, yolks and sugar for about 5 minutes, then very slowly add the choc mix. When that's all combined fold in the flour. Bake at about 350 degrees, for about 10 minutes. You want the middle of each cake, to be liquid still.
This recipe may take a little practice but trust me when you get it just right, it really works. Good luck, and have fun.

This is an easy recipe that my husband loves!
1/2c (1 sticki) unsalted butter at room temperature
3/4 cup freshly grated Parmesan cheese (i've used the pregrated and it tastes great too)
1/2tsp salt or to taste
Lots of freashy ground pepper
Combine butter, cheese, salt and pepper in a glass or metal bowl. Start to boil water for your favorite pasta. While the water is warming place the bowl on top of the pot to melt the butter. Once the butter is melted remove from pot and stir. Add pasta to boiling water and cook til done. Drain pasta and combine with butter/cheese sauce. Stir to coat. Top with additional cheese and pepper if you like.
