This is a great recipe that always gets eaten at holiday turkey dinners whereas most salads (no matter how special) are often left in the serving dish. With all the crisp and bright flavors it's a nice balance.
Cranberry Salad
2 cups water
1 3oz pkg raspberry gelatin and 1 pkg orange gelatin
2 16 oz cans whole cranberry sauce
1 8 oz can crushed pineapple
1 1/4 cup chopped crisp apples
1 cup chopped walnuts
1/2 cup finely chopped celery
1 Tablespoon finely shredded orange peel
Thin orange peel curls and orange slices
Bring water to boil. dissolve gelatin and stir in cranberry sauce and undrained pineapple
Cook and stir over low heat till sauce is dissolved
Chill 35 to 49 minutes or till partially set
Stir in apples, walnuts, celery and orange peel
pour into a 10 inch fluted tube pan
Chill till firm
Garnish with orange slices and orange peel curls

CRANBERRY ORANGE BUTTER CAKE
1 package butter flavored yellow cake mix
2 tablespoons orange juice concentrate, thawed
1/3 cup oil
3 eggs
1 (16 ounce) can jellied cranberry sauce, reserve 3 t. for the glaze

Heat oven to 350 degrees.
Grease and flour a 12 c.
Bundt pan.
In a large bowl combine all cake ingredients at low speed until moistened, then beat 2 minutes at high speed.
Pour into prepared pan.
Bake for 35-40 minutes.
In a small saucepan, heat all glaze ingredients until well combined.
While still in pan, using a long tined fork, prick cake at half inch intervals; pour half of glaze over cake.
Let stand 10 minutes; invert cake onto serving plate.
Prick this half of cake at half inch intervals; then spoon remaining glaze over cake.
Cool cake and serve with either ice cream or whipped cream.

Party Meatballs
INGREDIENTS
1 pound lean ground beef
1 egg
2 tablespoons water
1/2 cup bread crumbs
3 tablespoons minced onion
1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
Bake in preheated oven for 20 to 25 minutes, turning once.
In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.

1 (16.5 ounce) can pitted dark sweet cherries, drained
1 can crushed pineapple
1 (6 ounce) package cherry gelatin
2 cups boiling water
1 cup chopped pecans (optional)
DIRECTIONS
In a medium saucepan over low heat, melt the cranberry sauce.
Cut the cherries into pieces and add them to the melted sauce. Stir in the pineapple with its juice. Remove mixture from heat.
In a medium bowl pour the boiling water over the gelatin. And stir until all the gelatin has dissolved.
Add the gelatin mixture to the cranberry mixture and stir. Stir in the optional nuts. Pour into a 9x13 inch pan and chill until set.

"Festive Crab Cups" - 15 appetizers
1/3 cup cream cheese; softened
1/4 cup canned crabmeat; drained, flaked and cartilage removed
2 tbsp. chopped green onions (scallions)
1 (2.1 oz.) pkg. frozen miniature phyllo tart shells
1/3 cup whole-berry cranberry sauce
In small bowl, combine cream cheese, crab and onions until blended. Place tart shells on an ungreased baking sheet. Drop 1 tablespoon crab mixture into each shell; top each with 1 tsp. cranberry sauce. Bake at 375* for 12-15 minutes or until heated through.

I take a pork loin roast and put a good rub on it and make slits about 1 1/2 in apart and put cranberry sauce in the slits, bake at 350 deg

Graham cracker crust on the bottom of a cake pan. Cranberry sauce (jelly or whole berry) over that and whip cream over that. Sprinkle more crushed graham crackers on top to garnish...yummmmmmmmmmmmmmmmmmmmmmmmm

Make a jello salad. Use cherry jello, chopped nuts, red grapes cut in half and a can of whole cranberry, small can crushed pineapple, drained. .
Make jello using the hot water only. Put in cranberry sauce and refrig. until it starts to gel. Put in other ingredients and let set.
