Is it a special lunch? Defiently make it something that she likes and don't make it too special because of lunch. The thought is really what counts and maybe a little picnic. Fruit is always a plus, i personally like nice sandwiches. Hope that helps!!

Guacamole Burger Wrap

Ingredients:

1/4 cup onion, finely chopped
1 tablespoon canola oil
1 pound ground beef
seasoned salt, to taste
4 large flour tortillas, warmed
Guacamole (recipe follows)
1/8 teaspoon pepper
shredded lettuce leaves
1 tomato, diced


Preparation:

Sauté the onion in the oil until the onions are soft. Mix the ground beef and cooked onion together and form into 5 x 1 inch rectangular burgers. Grill 3 to 4 minutes on each side or to desired doneness.

Place patties on warmed tortillas with lettuce and tomatoes. Top each burger with Guacamole, roll up the tortilla and serve.

Guacamole

Ingredients:

3 avocados
1/2 jalapeño or serrano, stemmed, seeded and minced (serrano will be hotter)
1 tablespoon cilantro, chopped
1 1/2 tablespoons red onion, minced
juice from 1/2 lime
couple dashes fresh pepper
garlic salt to taste
several dashes Cholula Hot Sauce or your favorite

Preparation:

Coarsely mash avocado. Combine remaining ingredients.

Souperburger Sandwich
1 pound lean ground beef
1 medium onion, chopped
1 can (10 3/4 ounces) condensed Cheddar cheese soup
2 tablespoons ketchup
1/8 teaspoon black pepper
6 whole-wheat hamburger buns, split and toasted

Heat a large, non-stick skillet over medium-high heat. Add the beef and onion; cook stirring often to break up the beef, until it's browned and the onion is tender. Drain the mixture, and discard the fat.
Continue to cook over medium heat, stirring in the soup, ketchup and pepper. Bring to a simmer, stirring occasionally. Serve on toasted buns.

Chicken Nugget Caesar Salad

10 chicken nuggets, cooked according to package directions
1 package Caesar Salad Mix, with dressing, cheese and croutons included

Cut nuggets into 4 pieces each. Mix in prepared salad.
Serve with those Pillsbury refrigerated bread sticks dough with the garlic butter that you bake, and put cheese on them.

This is what I make for an easy and tasty lunch.

For lunch? I would go for something light. Chicken salad sandwiches or lunch meat/cheese sandwiches, some chips and ice tea.

I think stuffed tomatoes Take a tomato cut 3/4 into 6 parts fill with but don't cut all the way thru stuff with shrimp salad. serve with a nice wine and fruit as a dessert let me know how it turns out

I'm a mac & cheese gal myself. Nothing better than home made but just in case, can't go wrong with bonless chicken, many ways to make it, healthier, cooks fast, less fat. followed with a ceaser salad?, & of course a side of mac & cheese!
