i ate a yummy sub sandwich for dinner...it was simple and easy..and good.

First of all, I'm going over to either Maximum's or Obscene and Vulgar's for dinner in the near future. Sounds good to me. Just hold the cheddar.
For me, I always like something hot and a variety. Roast beef, or a beef rump roast, surrounded with carrots, green beans, onions, baby potatoes and it's own gravy is always good. Don't forget dessert. A warm chocolate volcano cake with a dollop of vanilla ice cream is beautiful. At the end, when everyone settles, top the night off with a cup of coffee.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Spinach pies.
Saute some fresh spinach with garlic, salt and pepper.
Stretch out some refrigerated dough like a pizza, and cut in half.
Fill one side of the half with the spinach and top with cheese (Gruyere and feta works very nicely)
Fold over and seal with the flat end of a fork.
Bake at 375 degrees on a cookie sheet for about 25-30 minutes.
Serve with spicy marinara sauce for dipping.

quiche, it's a good way to use up leftovers. fill a prebaked pie shell with anyfilling you want. whisk 4 eggs and 1 1/2 cream in bowl, pour into shell. bake 375 30-40 minutes, enjoy. that's what i'm having for dinner

You know what sounds good, corn beef and hash, it comes in a can, with over easy eggs
on top. I love this for dinner.
That spinach pie and Quiche sound good too.
I didn't know quiche was so easy to make. I love spinach quiche but I'm not a cook....
