STRAWBERRY CHEESECAKE
INGREDIENTS
1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter or margarine, melted
2 (10 ounce) packages frozen sweetened strawberries, thawed
1 tablespoon cornstarch
3 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/4 cup lemon juice
3 eggs
1 tablespoon water
DIRECTIONS
Combine graham cracker crumbs, sugar and butter. Press onto the bottom of an ungreased 9-in. springform pan. Refrigerate for 30 minutes. In a blender or food processor, combine strawberries and cornstarch; cover and process until smooth. Pour into a saucepan; bring to a boil. Boil and stir for 2 minutes. Set aside 1/3 cup strawberry sauce; cool. Cover and refrigerate remaining sauce for serving. In a mixing bowl, beat cream cheese until light and fluffy. Gradually beat in milk. Add lemon juice; mix well. Add eggs, beat on low just until combined. Pour half of the cream cheese mixture over crust. Drop half of the reserved strawberry mixture by 1/2 teaspoonfuls onto cream cheese layer. Carefully spoon remaining cream cheese mixture over sauce. Drop remaining strawberry sauce by 1/2 teaspoonfuls on top. With a knife, cut through top layer only to swirl strawberry sauce. Bake at 300 degrees F for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove side of pan. Thin chilled strawberry sauce with water if desired; serve with cheesecake. Store in the refrigerator.

For Liner Dough
3 oz. Unsalted butter, softened
3 oz. Sugar
3 oz. All purpose flour
2 oz. Hazelnuts--ground
1/2 oz. Lemon grated for zest
For Cheesecake
1 lb. Philadelphia cream cheese
11 oz. Sugar
3 1/2 cups Heavy Cream
5 oz. Milk
4 oz. Pureed strawberry
5 ea. Eggs
To make the dough: in a bowl, combine the butter with the sugar and flour. Stir well. Add nuts and lemon zest.
On a board, lightly dusted with flour, roll out the dough into a 10 inch round shape.
Lightly butter a 10 inch round cake pan. Place the dough in the bottom. Bake in a preheated 325 degrees F oven for about 8 minutes, until dry to the touch.
To make the cheesecake in an electric mixer, whip the cream cheese for about 5 minutes until light. Add the sugar and whip another 5 minutes. Turn machine off and scrape sides of the bowl.
Add the liquids gradually, stopping machine occasionally to scrape the sides of the bowl.
Pour into the cake pan with crust at bottom, bake for approximately 1 1/2 hours or until brown at the top and cake springs back up to the touch.

Strawberry Amaretto Cheesecake
Ingredients
(6 servings)
1 c GRAHAM CRACKER CRUMBS
1/4 c GRANULATED SUGAR

FILLING
2 lb CREAM CHEESE, softened

1 c HEAVY CREAM
6 EGGS
3 tb LEMON JUICE
1/2 ts BRANDY or BRANDY EXTRACT
1 c SOUR CREAM
1 tb VANILLA EXTRACT
2 tb ALL-PURPOSE FLOUR, sifted
1 c FRESH STRAWBERRIES, chopped
In a large bowl, beat the cream cheese, sugar, and cream
Until smooth. Add the eggs, one at a time, making sure that
The mixture is smooth and creamy. Fold in the strawberries.
Pour mixture into the chilled pan and bake in a pre-heated
425 Degree F oven for 15 minutes, then reduce the
Temperature to 275-degrees F and continue to bake for 1
Hour.
Transfer to a wire rack and allow to cool for 3 hours.
TOPPING
2 1/2 c FRESH STRAWBERRIES, chopped
1 c AMARETTO LIQUEUR
1 tb GRANULATED SUGAR

STRAWBERRY CHEESECAKE
2 c. strawberries
1 box Jello cheesecake mix
8 oz. Cool Whip
1 c. water
1 c. sugar
6 tbsp. cornstarch
1 box strawberry Jello
Dash of red food coloring
Step 1: Make cheesecake as directed, except add 1 (8 ounce) Cool Whip to cheesecake.
Step 2: TOPPING:
1 c. sugar
1 c. water
6 tbsp. cornstarch
Strawberry Jello
Food coloring
2 c. fresh strawberries
Cook sugar, water, and cornstarch on low heat until thick, then add Jello, food coloring, and strawberries. Spread topping over cheesecake. Chill until ready to serve.
