Poker is the only good answer.
All other games the 'house' has a vested interest in players losing. Even if the house edge is 1% they still have an edge.
In poker the casino takes a tournament buy in or in a ring game a rake while you play. They don't care if you win a million dollars or one hundred dollars. So your win rate is related only to your skill in the game. Long term if you have superior skill you will end up making plenty of money.
Even the so called good bets in a casino still have a house edge. Even if you learn to count cards in black jack and they realize this, they will kick you off the table. Casinos don't like to lose money, so if they think you have a skill that allows you to neutralize their edge they will simply tell you to leave. So of all the games to master, poker is clearly the answer.

All games in a casino favor the house overall, you are at a built in disadvantage against the casino. Poker is the only game in a casino that has no built in odds to the house. I deal poker in Vegas and i myself never play any other games besides poker. But the best odds are black-jack.

I believe that it is Blackjack for the average hand as you are playing only the dealer's hand.
The best overall odds at a casino come in roulette as you can bet on black or red for the spin... a 50/50 chance. Of course, in roulette there are many other bets that pay more than this red vs. black bet that have far worse odds.
Now, in blackjack, you only play the dealer, and the dealer is limited by the hand they can use to play against you. It is the best average odds of any game. However, there are usually lower and upper limits to the amount you can bet on any one hand, and this upper limit is to prevent you using 6-Sigma betting to enhance your chances to the fullest.
This betting technique tells you to double your bet each time you lose a hand ($5, then $10, then $20, then $40... and so on... 6 times). When you win a hand, you return your bet to the original bet you had ($5) and start again.
If you can double your bet 6 full times, you have something like a 99% chance of getting your original bet returned to you... effectively (and in a perfect world) you never lose... you will always gain that original $5 back, then return to starting your betting cycle with $5. Work it out on a piece of paper and you will see how your money always grows (except for that 1% chance that you lose on your 6th "Double-down")
However, you will notice that the limits on a table will not allow you to be able to double your bet 6 times!
Casinos... they are in it to win money and they are not stupid! They have thought of enough techniques to ensure that they are profitable to keep me thinking of ways around them for a lifetime! lol

Not a gambler, but I have heard on TV that black jack has close to even odds if played perfectly. If you learn to card count you can tilt the odds in you favor. Of course, card counting is a difficult skill to acquire, and casinos frown on you doing it enough to through you out if they suspect it.

Probably either Blackjack or Poker. I read somewhere that the odds of winning at Blackjack are about 20%. And with some skill you could win at Poker.
