"Refried Frijoles" - Serves 6 to 8
1 (16 oz.) bag dried pinto beans
2 1/2 quarts water
1 tsp. salt
1/3 cup vegetable oil, lard or bacon drippings
1 medium onion; chopped
4 crushed garlic cloves
1 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
Chopped parsley or cilantro (optional)
Pick through beans for any bad ones, then rinse them. In large pot, bring beans and water to boil. Reduce heat; simmer 1 1/2 hours. (Add salt after 45 to 60 minutes.) Cook until beans are soft, adding extra water if necessary.
Use a potato masher or the back of a wooden spoon to mash the beans in their cooking liquid.
In skillet, heat oil (or melt lard) over medium heat; add onion and garlic. Saute until onion is translucent. Stir in remaining spices; add mashed beans. Cook about 10 minutes, stirring occasionally and being careful not to overcook the beans (if they dry out, add more water). Garnish with sprigs of parsley or cilantro.

I have made them, it takes overnight to soak, then about 2 hours to cook, and about 10 minutes to refry them.
Refried Beans (Frijoles Refritos)
Makes 6 servings
Ingredients:
2 cups dried pinto
2 medium onions, finely chopped
2 cloves garlic; chopped
1 bay leaf
2 or more serrano peppers, chopped (optional)
3 tablespoons lard
salt and freshly ground pepper, to taste
extra lard; (optional)
Preparation:
Cover beans with water and soak overnight. Drain beans.
Add fresh water to cover, the onions, garlic, bay leaf and peppers. Cover, bring to a boil, reduce heat and simmer gently, adding more boiling water as necessary. Continue cooking until beans are soft. Add salt and pepper to taste. There should not be much liquid when beans are cooked.
In a food processor, purée the beans. Heat remaining lard in a skillet and sauté purée until it becomes a smooth, somewhat dry paste.
