Peanut Butter Cheesecake Squares

Ingredients

BASE:
1 1/2 c Graham cracker crumbs
3 tb Sugar
1/4 c Butter flavor Crisco, melted or just butter
1 tb Milk

FILLING:
1 pk Cream cheese, 3 oz, softened
1/4 c Creamy Peanut Butter
1/4 c Sugar
1/4 c Milk
1 Egg
1/2 c Chopped peanuts

DRIZZLE:
1/4 c Semi-sweet chocolate chips
1 ts Butter Flavor Crisco <<
Instructions

1. Heat oven to 350 degrees.
2. For base, combine crumbs and 3 tablespoons sugar in small bowl. Combine melted butter flavor Crisco and one tablespoon milk, Stir into crumbs. Press lightly into 8 x 8 x 2-inch pan. Bake at 350 degrees F. for 20 to 22 minutes.
3. For filling, beat cream cheese and peanut butter in small bowl at medium speed of electric mixer until well blended. Add 1/4 cup sugar, 1/4 milk and egg. Beat well. Stir in chopped nuts. Spread over Baked crust. Return to oven. Bake 20 to 22 minutes, or until set.
4. For drizzle, melt chocolate chips and Butter Flavor Crisco on very low heat or at 50% power in microwave. Stir to combine. Drizzle from end of spoon back and forth over top. Chill. Cut into 2 x 2-inch squares. Cover. Store in refrigerator.

Start with your regular recipe. Make sure you use real butter, not shortening. Add the secret ingredient - about a cup of chopped, dry roasted peanuts (run them through your food processor for a few seconds). It makes all the difference. Don't bake too long - they should NOT be brown, just barely tanning at the edges. Let them cool a bit on the pan before removing to a rack. They'll be chewy and delicious for a couple of days, if you can keep from eating them all.

The biggest mistakes people make when baking cookies are using shortening or margarine instead of butter, and overbaking. Most cookies should not look done when you take them out of the oven.

Here's a great recipe for peanut butter cookies that are super easy and don't require any flour:

1 cup peanut butter
1/2 cup sugar
1 egg

Chill, roll into balls, flatten on cookie sheet. Bake 20 min @ 325 degrees.

I place softened Vanilla Ice Cream in the middle of two cookies to make an Ice Cream Sandwich and freeze....

Peanut Butter Icebox Dessert
2-1/4 cups crushed peanut butter cookies (about 11 cookies)
1/4 cup sugar
1/4 cup butter or margarine, melted
2 packages (3 ounces each) cream cheese, softened
1 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed, divided
2-1/2 cups cold milk
2 packages (3.9 ounces each) instant chocolate pudding mix
Additional peanut butter cookies, broken into pieces
In a bowl, combine crushed cookies, sugar and butter; press into an ungreased 13-in. x 9-in. x 2-in. baking dish. Bake at 350° for 6-8 minutes or until golden brown; cool on a wire rack.
In a mixing bowl, beat cream cheese and confectioners' sugar; fold in 1 cup whipped topping. Spread over cooled crust. In another mixing bowl, beat milk and pudding mix on low speed for 2 minutes or until thickened. Spread over cream cheese layer. Top with remaining whipped topping; sprinkle with cookie pieces. Refrigerate for at least 1 hour before serving. Yield: 12-15 servings.

"Chunky Chocolate Chip Peanut Butter Cookies" - 3 dozen

1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup (1 1/2 sticks) butter or margarine; softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 egg
1 tsp. vanilla extract
2 cups (12 oz. pkg.) Nestle Toll House Semi-Sweet Chocolate Morsels
1/2 cup coarsely chopped peanuts

Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, brown sugar, granulated sugar and peanut butter in large mixer bowl until creamy; beat in egg and vanilla. Gradually beat in flour mixture; stir in morsels and peanuts.
Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly to flatten into 2" circles. Bake in preheated 375* oven for 7 to 10 minutes or until edges are set but centers are still soft. Let stand for 4 minutes; remove to wire racks to cool completely.

pb cookies
1 cup sugar
1 cup pb (chunky or smooth)
1 large egg
1 tsp. baking soda

Combine all ingredients in a bowl, mixing well. Roll into 1 inch balls, press flat with tines of a fork, bake 10 minutes at 350 degrees. Cool 5 minutes before removing to cooling rack.

You could try and find banana extract, and make a quick buttercream recipe, you know the one on the side of the powdered sugar box, and make them into sandwhich cookies. I think it sounds pretty good. Even if you don't use my suggestion, I think I will. Good luck and happy eating.
