We installed a laminate floor 2 weeks ago, and now my dog is constantly chewing his feet and ankles.

chewing at the feet and ankles is a sign of allergies, but i do not think it would be the laminate flooring, it could be what you use on the laminate floor it is allergic to. have you changed the food lately?? This sounds like a food allergy also.

No experience yet with dog pee and laminate but I have some with cat pee! Cat ruined my laminate floor, it was even the kind with glue, and I'll never use laminate again. It's too sensitive to liquids, and it scratches which can't be fixed. If you wipe up right away, no problem, but if it sits there wet for a while stuff can soak in and delaminate the laminate, which can't be fixed except by replacing pieces which is a lot of trouble, even supposing you can find extra pieces. Also, if it soaks in at all there's no way to get rid of the smell. Let me suggest an alternative, which I have now and like very much. Home Depot sells it. It's vinyl planks which stick to each other but not the floor. It's cheap, easy to install, looks good, and it's very simple to replace pieces if they get damaged. People think it's wood until I tell them it isn't. It's also quite liquid proof. I've had water from the water dispenser leak onto it and sit there for hours with no problems. I have two large dogs and this stuff has stood up very well to their claws and to all of us coming in with sand on our feet.

A dog can be allergic to anything, if you want to find out what he's allergic to there is allergy testing. Bring him to the vet. I knew a dog that was allergic to grass and carpet.

Anything is possible but it more likely what you use to clean the floor. A lot of the Swiffer like products are very hazardous to animals causing allergic reactions or even liver failure. I would suggest reading the labels on your cleaning products to see if that might be the culprit.

Yes, Most likely the coating is burning the aminals feet and the dog is trying to stop it. If you wash the floor with baby shampoo it mite remove this coatind and help the dog out, or not. But other types of cleaners mite make this problem worse, that why I said baby shampoo. GOOD LUCK!
