Easy!
No Cheese Lasagna
Serves 6 - 8
12 strips lasagna noodles
1 large onion, chopped
1 tbsp oil or 3 tbsp water
2-4 garlic cloves, chopped finely
1/4 cup fresh basil (or 1/2 tsp dried)
1/4 cup fresh parsley (or 1/2 tsp dried)
2 1/2 cups tomato sauce
1/4 cup fresh oregano (1/2 tsp dried)
2 pkgs frozen spinach, thawed and drained
1 cup sliced muchrooms
1 cup sliced zucchini
salt and pepper to taste
Saute 1/3 onion in oil or water for 1 minute or until translucent. Add 1/3 garlic and cook for 1 minute then add mushrooms and cook another 2 minutes or until the mushrooms are soft. Remove from pan and set aside. Put another 1/3 of the onion and 1/3 garlic in the same pan and cook for one minute. Add zuc-chini and parsley and cook for another minute. Remove from pan and set aside. Do the same with the remaining onion, garlic and spinach.

Heat tomato sauce in another pan and add basil and oregano. Simmer for 2-3 minutes.

Boil the noodles as per directions, drain well. Heat the oven to 375°F. In a rectangular baking dish, pour 3/4 cup of the tomato sauce and lay about 3 of the lasagna noodles to cover the bottom of the dish. Spread 1/2 the spinach on top. Arrange another 3 pieces of lasagna and spread the mushroom mixture on top. Add a bit of the sauce and arrange another 3 pieces of lasagna noodles on top. Next, spread the zucchini mixture and add the remaining spinach on top. Finish with the remaining lasagna noodles and pour the remaining sauce on top.

Bake for 40-50 minutes.

Note: 1/2 cup of low fat mozzarella cheese, grated, can be sprinkled on top of each vegetable layer. Alternatively, 1/4 cup of ground almonds mixed with 1/4 cup nutritional yeast may be used as a substitute.

Lasagne

Ingredients

dried lasagne
1 small courgette
4 mushrooms
4 tbs vegemince
2 tbs sweetcorn
breadcrumbs
soya cheese

Tomato sauce:
1 medium onion
2 cloves garlic
mixed herbs
1 tin tomatoes
salt
pepper

White Sauce:
200ml soya milk
4 tbs nutritional yeast
knob of margarine
cornflower

Tomato sauce: Take the garlic and onions (thinkly chopped) and fry gently until soft. Add the tin of tomatoes and mixed herbs and salt and pepper and then blend until smooth.

White sauce: Heat the soya milk gently in a pan. Add the nutritional yeast and margarine. Once the margarine is melted add cornflour slowly until it starts to thicken and removed from the heat.

Cut up the mushrooms and corgettes into thin slices.

To layer the lasagne start with half of the tomato sauce at the bottom with half the vegemince and mushrooms. Then put a layer of lasagne. The next layer will be corgettes and sweetcorn covered with a quarter of the white sauce. Repeat the two layers then put a further layer of pasta on top. Then cover with breadcrumbs (the easiest way to make these is to grate a frozen crust, it doesn't go sticky then). Pour the remaining white sauce on the top.

Cook at gas mark 7 for 1 hour then take out of the oven and grate some melting soya cheese on the top. Return to the oven until the cheese has melted.

It is delicious served with salad. This recipe should serve 4-6 people.

Just don't add the cheese, It works for my mom!

I personally LOVE cheese, so I always make it with ALL the cheese I could get!

Try using small curd cottage cheese/monterey jack/parmesan cheeses. I also like (instead of sausage) ground beef...zucchinni is good in the sauce too...even a small amount of spinach.

there are still some people that dosen t like cheese ,I am one of them. but I do love lasagna.

All fruits are fruit and vegetables. A "vegetable" is a plant, any part of which is employed for food.

In the superstore, fruits are usually picked out far too soon. Some are rocks, many are bitter. Some of the fruit and vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
