Bitter and Sour Taste

Sour tastes (e.g. lemon juice) "pull at your bonnet strings" as my grandma says. Bitter tastes (e.g. strong coffee) are not nice, but in a different way. It's a different area of your tongue for each (and salty and sweet).

The tongue has thousands of taste buds, most of which are on the top of the tongue and some on the sides. Depending on their purpose (not, as most people believe, on their location), they sense what we perceive to be different tastes: sour, bitter, salty, savory and sweet.
Sour is the taste of acids. The more acidic the substance the more sour the taste. (Lemons, limes, etc.)
Salty receptors respond to the flavor of ionized salts. Different salts have slightly different tastes because they also contain other basic taste components. (Salt)
There is a long list of substances that yield the sweet taste, like sugars (e.g., sucrose, fructose, glucose, maltose, lactose) but glycols, alcohols, and aldehydes are also included. (Fruits, candy, chocolates, etc.)
Like the sweet taste there is a long list of substances that elicit the bitter taste. Most are organic, and the sense of bitterness was probably intended as a protective device (most poisonous plants taste bitter). Unsweetened coffee or cocoa powder are good examples of bitter.
Savoriness is the name for the taste sensation produced by the free glutamates commonly found in fermented and aged foods. In Japanese, the term "umami" is used for this taste sensation, whose characters literally mean "delicious flavor," and is now the commonly used term by taste scientists. Examples of savory foods are parmesan and roquefort cheese as well as soy sauce and fish sauce.

Sour is like a warhead, it makes your tastebuds tingle. Bitter is like that non sweet chocolate that is disgusting.
