Oh, gosh, I was going to say shopping spree!!! But then I realized you were a guy.
Option #1~ Run outside, wear a president mask, and streak while singing a romantic song you wrote yourself that professes your love to her in front of her house. Then you can tear up pieces of your boxers and use them as confetti.
Option #2~ Invite her over for dinner and play some nice music and light up some scented candles to get you two in the mood, and treat her to something nice like a romantic dinner by candlelight.
Option #3~ Take her by the hand and tell her you're taking her somewhere but don't disclose the location; then bring her to the roof of a tall building or a nice clearing of grass where you can get a perfect view of the night sky, and say something cheesy like comparing a constellation to her freckles or her eyes to the stars.
(Having sex afterwards optional for all three options).
