Make homemade nuggets out of it. If all else fails cover it with ketchup. What kid doesn't love ketchup?

Picky kids always love chicken fingers for some reason. Go figure. Try dipping them in your favorite batter or in a combination of egg and bread crumbs and baking until crispy, or deep fry them if you're not really concerned about fat and calories. Let them dip use ketchup, ranch dressing or barbecue sauce for dipping (or steal some of the dipping sauces from McDonald's). Also try these:

Chicken burgers - Simply grill the chicken breasts and arrange on buns with anything you'd put on a good hamburger. Try to slip in fresh carrot sticks or fruit salad on the side for nutritional value.
Soup - Combine chopped chicken breast with broth (canned, or homemade), noodles and whatever veggies your kids manage to tolerate.
Chicken Parmesan - Browned or lightly breaded chicken breasts baked with tomato sauce and mozzarella cheese. Serve with spaghetti (what kid doesn't like that, I ask you!).
Pizza - Store-bought pizza crust, canned sauce and the kids put on the toppings (cheese, the chicken, veggies, whatever they like). Easy, fast and the kids actually feel like they contributed to what they eat.

Hope this helps!

I've never seen anyone turn down chicken fingers! Cut the chicken breast into strips about 1/2" wide, coat with breadcrumbs seasoned with salt, pepper, garlic powder and fry until golden brown. Have little cups of honey mustard and ketchup (the plastic cups from pudding or jello work real well!) so that the kids can dip. Serve with french fries and a small salad.

grill it..then shred or just cut it up in small pieces wrap in in a small flour tortilla along with some cheese. You can melt the cheese by placing the rollup in the pan you grilled the chicken in..or a toaster oven is easy or even the microwave. My daughter loves 'em. Another thing she really likes is pizza with chicken on it ..i also put a little BBQ sauce over the top of the pizza or mixed in with the sauce. Hope this helps...OOOH one other tip that works for my daughter..if i let her help make the meal or let her help choose the recipe she usually is happier about eating it.

I can still smell the way home smelled when my mom made this for me....

all you'll need is a box of seasoned fry flour (my mom used the kentucky kind....can't think of the name right now, had a guy that looked curiously like colonel sanders on it, though), and your favorite marinade (i like to use lawry's lemon pepper marinade, but you can use whatever you and your kids like).

just cut your chicken breasts into strips like chicken fingers (or just start out with chicken tenderloins) and drop into marinade. let them sit in the refrigerator for a half hour or so before rolling in the fry flour and dropping into a skillet to brown the flour. transfer to a baking dish and at 350 let them back for about a half hour. kids cant resist chicken tenders and these are ones you can enjoy too.

I still make this for my husband and I :o)

you could cook it in the oven with seasoning then make some noodles (just plain with a little butter) when ready to serve place the noodles on the bottom and chop up the chicken into little pieces put on top of the noodles make it look interesting for the kids make their favorite vegi and make a smiley face design! They will most likely love it! good-luck!! ♥

Just put the food out, if they don't want it, they won't eat it. When they get hungry enough, they'll eat what's put in front of them. Look at this from a long term perspective. Do you want to encourage their pickiness, or help them learn to appreciate what comes their way?

cut into strips
grill or shallow fry the chicken first (grill is better)
make some simple batter i.e. flour n water.
or roll in breadcrumbs after applying egg
take the battered/breaded chiken strips n fry lightly mix in with some wedge potatoes and the whole lot will look surprisingly like chips!
serve with salad and/or beans
or some dips n salad
