i think Virgin Mary is the most common saint figure that appears to people for two reasons:
1) on one hand as other people have said, she is one of the most remarkable female saint in the history of western civilization
2) on the other hand, she is such a powerfull symbol for feminity and pureness, that when someone is to get a revelation, if their revelation is about the power within, all that Virgin Mary stands for relates exactly to their inner change. Therefore, She appears to them, or more precisely, they tend to recognize something that they knew before "a mere symbol/concept" as a reality within.

I guess it helps that She's female so that sort of sticks out as the only only sign from God - if we had a bunch of famous female saints - it would be harder to assume that you saw the likeness of Mary in your pancake/palmtree/smudgemark/tealeaves/ink blot/creditcard carbon copy.

if you ask people to picture Virgin Mary vs the Mary Magdeline in the same poses and attire - who would really be able to tell the difference? There's no clear description of what her face looks like.

that is a very good question, one that ought to make some folks uncomfortable. and that is a good thing...i don't have an answer, though, it is anybody's guess.
