ANY TYPE BAKES WELL. Just remember to clean & dry them & use an oil on the skins prior to wrapping each one in aluminum foil & baking in a 325 degree oven for 30 minutes to one hour (depending on the size of the potatoes) The larger they are, the longer it takes to cook them in the middle. You can also bake them in a covered pan or baking dish all at one time & avoid using the foil. Restaurants use BAKERS because of their larger size & eye appeal. A BAKER is a potato that is about the size of the length & width of an adults hand with a weight of 16 ounces or more.

I've found that Russett potatoes are best. Also you can use red potatoes. They work good too. They are also great for making baked potatoes on the grill....:-)

Baking potatoes as already mentioned are actually just large Russet potatoes. If your store doesn't sell baking potatoes, get a bag of russets and pick some big ones out.

Russett potatoes. The skin is thick enough to hold up to handling afterwards.
Stay away from Gold or Yukon potatoes. The skin shreds off when you try to cut them after baking.

Baking potatoes. Seriously...that's what they are called. Large, oval brown-skinned potatoes are usually sold in bins in the supermarket as "baking potatoes".
