2 scallions, coarsely chopped
1 clove garlic, peeled
10 ounce package frozen chopped spinach, thawed and squeezed dry
1/2 teaspoon cayenne
1/4 pound cream cheese
8 oz. sour cream
2 tablespoons lemon juice
Splash sesame oil (optional)
1 tablespoon soy sauce
Combine all ingredients in blender and process until smooth. Transfer to bowl and serve with raw vegetables.

INGREDIENTS
1 (14 ounce) can artichoke hearts, drained
1/3 cup grated Romano cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon minced garlic
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/3 cup heavy cream
1/2 cup sour cream
1 cup shredded mozzarella cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a blender or food processor, place artichoke hearts, Romano cheese, Parmesan cheese and garlic . Pulse until chopped, but not ground. Set aside.
In a medium bowl, mix together spinach, heavy cream, sour cream and mozzarella cheese. Stir in artichoke mixture. Spoon into prepared baking dish.
Bake in the preheated oven for 20 to 25 minutes, or until cheese is melted and bubbly.

This is my own recipe I created. I brought it for a work party and got raves. Nobody knew it was tofu (which also lowers the fat content hugely).
1 box of silken tofu (make sure you get the silken/soft version)
½ package of lowfat cream cheese
2-3 tablespoons of lowfat sour cream
3 tablespoons of skim milk
Run this mixture through food processor until smooth
1 ½ cups of 2% milk shredded cheese (I used the four cheese blend)
1 ½ lbs. of frozen spinach (I cooked it in the microwave to thaw it out before adding it).
Blend everything in a pot over very low heat on the stove until bubbly. Add salt, pepper and garlic to taste.
Serve with french bread, tortilla chips and/or veggies.

1 can water chestnuts, diced
1 pack ranch seasoning
Mix together.
easy, and quick, and cold.
you can leave out the water chestnuts if you want too. i do it sometimes.
