Why do cakes go hard when they are stale and biscuits go soft when they are made of the same stuff?

Eggs - Cakes have eggs and that is a huge difference - the protein spoils making the cake stale. Hope this helped.

Sorry, One's a Cake and One's a Biscuit, 2 different formulas. You be off better asking, why are Red Apples sweet and green Apples sour, they're both fruit. You'll get alot of different ideas for your Q. My question is, why do you have cake and biscuits around that long? May I have an Apple please? A Yellow one?
