i.e suppose i scan a document but i want the scanned copy to be in a .Doc format(MS-word etc) rather than in a normal format that the scanned document comes like jpeg etc

OCR softwares perform these conversions. Although there are a large number of htem available, however the best is "Abbyy FineReader".

Yes, that kind of software is called Text recognition of OCR software. There are a bunch out there varying in price... sometimes it's bundled with your scanner software.

PDF Converter will convert to Word. They will allow you a brief free trial with the option to buy. It is a great program and I suggest it if you can afford it. Check it out.

You can get HP Document Viewer. It can convert scaned documents and pics into word and other types of stuff. I think you can find it at e-BAY, www.download.com, or www.hp.com.
