In a (3/4) song I made, in one measure three notes are played. The first has 3 beats to it, the second 2, and the last 1. Meaning, each is played as a quarter note, but held down until the end of the measure.

Would I draw that as three quarter notes with slurs between them? If not, how would I make that?

Use a dotted half note. The musicians sometimes get confused if you use a whole note. You can go ahead and use a whole rest instead of a dotted half rest if you're having a rest for a whole measure, though.

If you're going to hold it for 3 beats, use a dotted half note.
If you're going to use it for 2 beats, use a half note.

As for 'slurs'... if the pitches are changing you may use the term slur, if they remain the same, it's called a 'tie'.

In addition... If you're going to have two notes played at the same time, one lasting for 1 beat, the other held out until the end of a measure, then just show it.

Try changing your quarter notes to a dotted half note which you will hold for three beats in that measure. Hope I'm reading your question correctly.

The last note should be a whole note.

Or if it's to last for 8 beats until the end of the measure, a double whole note.

Means you hold the note till the end of the measure.

put whatever time signature you want as long as it fits with your music. you can always put a fermata on the last note.
