"This is so easy to make! Simply melt the chocolate and dip the cherries. Be sure to have a sheet of wax paper on hand. The recipe works well with strawberries, too."

INGREDIENTS:
12 ounces milk chocolate, chopped
8 fluid ounces milk
10 cherries with stems

DIRECTIONS:
1. Using a double boiler, heat the chocolate until melted. Stir in milk, using enough to make the chocolate smooth.
2. Holding the cherries by their stems, dip them one by one into the chocolate mixture.
3. Place the coated cherries on wax paper until the chocolate has dried.

Chocolate Covered Cherries
Yields: 50 servings

"Life can be a bowl of cherries, and chocolate covered ones at that! Simply enrobe luscious maraschino cherries in a dough of butter, corn syrup, condensed milk, vanilla extract and powdered sugar. Chill the cherries and dip in melted chocolate."

INGREDIENTS:
8 tablespoons melted butter
6 tablespoons corn syrup
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
3 pounds confectioners' sugar
3 (10 ounce) jars maraschino cherries, drained
2 cups semisweet chocolate chips
1/2 tablespoon shortening

DIRECTIONS:
1. In a large mixing bowl, combine butter, corn syrup, sweetened condensed milk, vanilla, and sugar. Knead dough, and form it into balls with a cherry wrapped in the middle. The balls should be approximately the size of walnuts. Place balls in the freezer to chill.
2. In a double boiler, melt chocolate chips and shortening together. Dip the cooled balls in the chocolate, let cool on parchment paper.

Just the cherries (with stems, if possible) and chocolate is all you need. You can add a splash of a liqueur like Grand Marnier or something like that if you want. You can also add paraffin or beeswax to make the chocolate more "shiny" if you like...but it is really not necessary.
