I have some rich caramel sauce that is supposed to be refridgerated after opening. However, I accidentally left it sitting out for a day and a half. Once I realized my folly, I put it back in the refridgerator. Will it be safe to eat again? Or did my mishap cause it to go bad? (Also, I was eating out of it with a spoon. Will This have allowed the bacteria time to grow and fester? Is it now ruined? Or should I just eat it up before it has a chance to go bad?)

The rich caramel sauce that I make has butter and cream in it---I wouldn't chance eating it after a day and a half sitting out. Maybe the commercial variety has preservatives in it but I still wouldn't risk it. Double dipping with your spoon just compounds the risk. Why not just get rid of it. The couple of dollars lost would be nothing compared to becoming ill.

Is it the kind of caramel in the jar? Smuckers? If it is something like that it should be okay for having been unrefrigerated a day and a half. Some things to consider: was it warm in your house or where the caramel sat (makes it go bad faster); caramel can get crystallized when it starts to go (like honey); does it look okay? Taste a little -- but if your house was not too hot and it did not sit in the sun, I would still eat it. (I do this with Dove and Smuckers hot fudge/chocolate sauce -- I will open it and just leave it out, to avoid having to reheat the cold sauce the next day. It's been fine.)

A lot of it depends on the food. Meat would spoil faster than caramel sauce. But if in doubt, throw it out. Play it safe.

Don't eat it. Bacteria probably grew in the item when it was at room temperature, but making it cold again only slows down the bacteria (it does not kill it). You could still get very sick from eating it, so toss it!

If you had not ate straight from jar you might have been ok as long as home was at room temp. The bacteria from spoon killed it. I would toss it.

well if you are like part of my family we have stomachs of steal but even that i wouldnt eat not becasue it was left out that didnt bother me but the eating out of it with a spoon I think you are right bacteria probably grew! I Wouldnt Chance It!

I would throw it out because bacteria grew in there. Especially that if something you left have moisture and warm, that's where bacteria will reproduce the fastest.

my husband has a bad habit of not putting stuff back in the fridge..caramel being one of them..he left some out over night and we put it back in when we found it..we both ate..we were fine..so you should be as well :)

Don't be a wimp, if it still tastes good just eat it, if it doesn't kill you all those germs and bacteria will strengthen your immune system and make you stronger.
