This is really, really good with pork.
Braised Red Cabbage and Apples
4 tbsp. bacon fat
2 tbsp. sugar
1 onion, chopped
2 lbs. red cabbage, shredded
2 peeled Granny Smith apples, cored and sliced
2 tbsp. cider vinegar
1/2 tsp. caraway seed
1/4 tsp. nutmeg
1/8 tsp. cayenne pepper
1/2 cup dry red wine
salt
Melt the bacon fat in a skillet, add the sugar and cook, stirring, for two minutes. Add the onion and cook slowly until lightly colored. Stir in the cabbage, apples, vinegar, caraway seeds, nutmeg, cayenne and red wine.
Cook over low heat, covered for 10 minutes, then add 1/2 cup water and cook, with cover askew, stirring occasionally, for 30-40 minutes more. Add salt to taste. Serve hot or cold.

My Mother used to cook it this way...
RED CABBAGE:
1 large head red cabbage
2 Tablespoons bacon fat or oil
1/2 cup red wine
3 Tablespoons red currant jelly
1 teaspoon salt
dash of white pepper
pinch of powdered cloves
1 teaspoon sugar
Wash, shred and drain red cabbage. Heat bacon fat or oil in large pot. Add cabbage; heat 5 minutes. Add remaining ingredients. Stir well. Continue to stir a few minutes until all flavors are absorbed. Cover; cook cabbage over low heat 25 minutes. Serve hot.

You could perhaps cook it German style? There are many twists to this, but I usually will shred the cabbage, then find me a couple of good cooking apples, like a Johnathan or other good tart red apple, shred it as well, and steam them together. Bit of salt/pepper, some butter. Also, try looking up German Red Cabbage for other ideas.

I like to steam it together with green cabbage. It needs nothing but a little bit of salt or pepper. Fantastic flavor. You can also steam some of the leaves and mix up some ground beef, flavor it the way you like, and make cabbage rolls. Add some spicy tomato sauce to it when the beef is almost done.

Although you can cook it, it's great raw in a salad. Just slice it up (don't do leaves). Little strips.
