I'm looking for a recipe for fudge, most of the ones I've tried either turn out like sauce or are very brittle... I want to make some rich, soft fudge... Thanks in advance...

Fudge really is very easy if you just follow a few simple steps. First of all never, ever use sweetened condensed milk, only use evaporated!!!! Too much sugar ruins a good fudge. Also most recipes call for 3 cups of sugar, you only need 2 1/2 and I'm talking about recipes for REAL fudge none of that 5 minutes, fool proof crap.
The trick is to bring your evaporated milk and sugar to a boil, then start your timer for 8 minutes exactly. Stand at the pot and do a very slow stir the entire time. If it seems to be bubbling too fast turn the heat down a tad. At the 2 minute mark start adding 3/4 of a cup of COLD butter, I have mine chopped up into tablespoon size pieces.
Also before you start boiling (because YOU CAN"T LEAVE THAT POT) put your jar of Marshmallow fluff along with 1/2 bag of semisweet chips and 1/2 bag of milk chocolate chips in a bowl with one tsp of vanilla. Have your 8x8 pan ready also. I line mine with tinfoil with a bit of cooking spray on it.
Once you've boiled your sugar, milk and butter for the full 8 minutes (adding butter in the last two), add this to the bowl of chocolate and mix very well. Pour in pan. Let cool to room temperature and put in the fridge to set. You can also freeze this. Bring back to room temperature when you're ready.
So your ingrediants are:

Can of evaportated milk
2 1/2 cups of sugar
3/4 cup of butter, COLD

Bring milk and sugar to a boil, set timer for 8 minutes, with about 2 minutes to go begin to add the butter and bring it back to a full boil to finish out the 8 minutes

1/2 bag of semi sweet chips
1/2 of milk chocolate chips
1 tsp of vanilla
1 jar of marshmallow fluff
(here is where you would put nuts also, if you prefer)

all ready in a nice big mixing bowl (heatproof)
Pour the boiled mixture into the bowl and mix all well with a heatproof spoon or spatula. Put this into a 8x8 prepared pan.
Cool to room temp and then to fridge. bring back to room temperature when you're ready to cut and eat.

The very, very best fudge is called Fantasy fudge. The recipe is on the jar of marshmallow cream. It is very easy and so creamy and always turns out. Everyone thinks i slaved over a hot stove forever. It takes 5 minutes of boiling - exactly so you can't mess it up; add the marshmallow cream and voila it is done. I have made it every year for the last 10. Everyone expects it now so i have to make like 10 lbs to share. Try it! You can find the recipe online too.

Oh man, I am at work, but mine has marshmallows, chocolate chips, etc. Email me and I will try and find the exact one for you. My mom makes the most wonderful fudge in the world -- I can stand next to her with matching pot & ingredients and mine will turn out either syrup or a rubber ball. SO, I had to go looking for another route and the one I use is absolutely foolproof.

I FOUND IT!!!!!!!!!!!!

Ingredients:
2 tablespoons butter or margarine
2/3 cup evaporated milk
1 1/2 cup sugar
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cup semi-sweet chocolate chips
1/2 cup chopped pecans or walnuts
1 teaspoon vanilla extract


Directions:

Combine butter, evaporated milk, sugar and salt in medium, heavy saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 4-5 minutes, stirring constantly. Remove from heat. Stir in marshmallows, chocolate chips, nuts and vanilla. Stir vigorously for 1 minute or until marshmallows are melted. Pour into foil-lined 8-inch square baking pan. Sprinkle with additional nuts if desired. Chill until firm.

Variations: Milk Chocolate Fudge: Substitute 2 cups milk chocolate chips for the semi-sweet chocolate chips. Butterscotch Fudge: Substitute 2 cups butterscotch chips for the semi-sweet chocolate chips. Mint-Chocolate Fudge: Substitute 1 1/2 cups mint-chocolate chips for the semi-sweet chocolate chips.

I tried the one from Good Eats on the Food Network, it's from Alton Brown and it's soft and smooth and creamy and rich. Just be sure to follow the directions exactly, which are not very hard but when you have to let it cool to 130* it takes way longer than 10 minutes- almost a half hour

Recipe
3 cups sugar,2/3cups pet milk, 1 1/2stick of butter.12 oz. Chocolate chips, 7oz. jar marshmallow cream, 1/2tea. vanilla 1/2cup nuts(optional)
Stir sugar and pet milk add butter and cook over Low heat, When it comes to a low rolling boil stir continuously for 4 min. (only) take from heat & stir in Cho. vanilla. marshmellow creme & nuts. Put in oblong buttered pan. let set before cutting. MMMM Good

Theres a real good one, and easy if that, on the marshmallow cream jar. Its called fantasy fudge. easy and yummy!!
