Just to clarify, I read that "United States law forbids the sale of any animal's lungs for human consumption". Source: http://en.wikipedia.org/wiki/Haggis I know that wikipedia isn't the end-all, but just curious.

I don't think they are banned, just not much call for them so you don't see them in the market much...only bovine brains and spinal column are going to be banned (but are still currently ground up and put in hot dogs and balogna...the meat packers are stalling the feds on that).

I don't think the lungs themselves are banned, but I know a lot of places have had them seized because they weren't from a USDA approved facility. You can't just sell any sort of meat to the public without it being approved as being safe.

I saw thymus glands (sweetbreads) from cows and tripe (cows stomachs) in the supermarket the other day so why would they ban lungs as long as they came from a USDA and FDA approved source?

I just watched (4/18/2017) Andrew Zimmern s Bizarre Foods (in Panama City) and he said that "if he prepares cow lungs in the USA, he will be breaking the law". He did not elaborate on the reason except it is illegal. Must be.
