Ah, the potato! I love the potato. I love roasted new potatoes. I love sliced, sauteed potatoes with onions. Baked potatoes with lots of sour cream and butter. Fried, in the form of Texas fries, dipped in ranch dressing, Tater Tots in ketchup, or krinkle cut with just a dusting of salt. Mashed potatoes!
Hash brown potatoes in the morning. Potato Skins smothered in bacon, cheddar cheese and chives in the evening and Sweet potato pie at night. The potato is a delicious, and versatile vegetable that can be prepared and enjoyed many ways!

Try a mix of zucchini and yellow squash. Cut into bite size pieces and sautee in some butter until tender. Right before serving, mix some sour cream in with the butter and veggies for a yummy, creamy, (and I think healthy, lol) side dish or even main dish if desired. SOOO YUMMY!
