The second answer posted here is wrong.

To wish someone a happy Hanuka, you'd simply say "Hanuka Same'ach" (And yes, the first answer is correct regarding the way to pronounce the "ch".)

Chag means holiday and so you'd say Chag Same'ach if you want to wish someone a more general "happy holiday" which can be for any holiday.

hag sammea(ch) = something like 'happy festivity
