The cookbook is a few years old but had a great chili recipe in it. The steak and chicken both gave it a great flavor. I can no longer find the book or remember the recipe.

MARLBORO CHILI


1.5 lb. boneless chicken - cut into 1 inch cubes

1.5 lb. sirloin steak - cut into 1 inch cubes

2 Small green peppers, chopped

2 Medium onions, thinly sliced

2 Cloves garlic, crushed

1/4 c Cooking oil

3 - 16 oz. cans Tomatoes

3 tbs Chili powder

2 tsp Crushed cumin seeds or Ground cumin

1/4 tsp Tabasco sauce

1 c Water

3 15 oz cans Pinto beans Or kidney beans

Cook chicken, steak, green peppers, onions, and garlic in oil in cast-iron kettle until meats are lightly browned. Add all ingredients except beans. Cover and simmer 45 minutes. Stir in undrained beans; cover and simmer 25 minutes.

3 tablespoons olive oil
2 tablespoons red chili pepper flakes
1 tablespoon cumin powder
1 tablespoon chili powder
1 tablespoon coriander
2 tablespoons paprika
1 lb coarsely ground sirloin (It must be ground sirloin, not ground beef, I grind my sirloin on the food processer)
1 x-large onion, chopped
3 tablespoons minced garlic
2 (28 ounce) cans canned Mexican style stewed tomatoes
1 1/2 cups canned red kidney beans, drained (or more if desired)
1 cup chopped black olives
1/2 cup black coffee
1/2-1 cup red wine
4 tablespoons chopped fresh cilantro
2 scallions, sliced
6 drops liquid smoke
hot sauce

In a heavy-bottom stock pot, brown chili flakes, cumin, chili powder, coriander and paprika in olive oil, to release the flavor and aroma.
Add the ground sirloin, onions and garlic; brown.
Add all other ingredients.
Simmer for 2-3 hours.

CHILI PIT CHILI 4slices smoked bacon,2lbs. lean pork cut into cubes,1 1/2 cups chopped onion,2 large cloves of garlic-minced,1 TBLSPN.chili powder,1TSP.dried oregano,1/4TSPground cumin,1quart chicken broth,2-141/2-ounce cans hominy drained,6 ancho chilies,2-10ounce cans corn kernels drained_____in a large kettle,over medium heat,fry bacon until crisp;remove bacon.pour off all but 2-3TBSP.bacon fat;add pork.cook and stir until brown.add onions and garlic;cook and stir until onion is tender.crumble bacon and add with chili powder,oregano,cumin,chicken broth and drained hominy;bring to a boil.wash dried ancho chili pods,remove stemsand seeds;cut up with kitchen shears and add to pork mixture. simmer 2-3 hours until flavors blend and mellow,adding chicken broth or water if needed.add corn and heat.MAKES 8_10) SERVINGS
