Spicy Thai Ginger Beef
12 ounces beef top round steak
1 tablespoon fish sauce
1 tablespoon water
1 teaspoon finely shredded lime peel
1 tablespoon fresh lime juice
1 teaspoon granulated sugar
1 tablespoon peanut or vegetable oil
2 medium zucchini, cut into julienne strips
1 fresh, pickled or canned jalapeno pepper, seeded and finely chopped (see Cook's Note)
3 garlic cloves, finely minced
2 teaspoons minced fresh ginger
Hot cooked rice sticks or rice
2 tablespoons snipped cilantro
Trim fat from meat. Partially freeze meat. Thinly slice across the grain into bit-size strips. Set aside.
For sauce, in a small bowl stir together fish sauce, water, lime peel, lime juice and sugar. Set aside.
Add oil to wok or large skillet. Preheat over medium-high heat (add more oil if necessary during cooking). Stir-fry zucchini in hot oil for 1 to 2 minutes or until crisp-tender. Remove zucchini from wok. Add green onions to wok; stir-fry for 1 1/2 minutes. Remove green onions from wok.
Add jalapeno pepper, garlic and ginger to wok. Stir-fry for 15 seconds. Add meat; stir-fry for 2 to 3 minutes or to desired doneness. Return zucchini and green onions to wok.
Add sauce. Cook and stir about 2 minutes more or until heated through. Serve immediately with hot cooked rice sticks or rice. Sprinkle with cilantro.
Makes 3 servings.
Cook's Note: Because hot peppers contain oils that can burn your eyes, lips and skin, protect yourself when working with peppers by covering one or both hands with plastic gloves or bags. Be sure to wash your hands thoroughly before touching your eyes or face

Because gigner is such a pungent little rascal we always want to tame it down with sugar, isn't that the way we do it with everything? Add sugar. Well the choice is yours, do what your tounge tells you, in the mean time, it's not stir fry but a little rub you might like for chicken or beef, simple and to the point, a little S&P and cook as you may:
INGREDIENTS
4 ounces garlic, chopped
4 ounces fresh ginger root, chopped
1 tablespoon olive oil, or as needed
DIRECTIONS
In a food processor, combine the garlic and ginger. Pulse to blend, adding small amounts of olive oil to facilitate the blending, until it makes a smooth paste. Refrigerate or freeze.

Lemon Ginger Beef
Ingredients
(4 servings)
3/4 lb Flank steak
1 tb Cornstarch
1 tb Dry sherry
2 tb Peanut oil
1 cl Garlic,minced
1 Lemon Ginger Sauce
* (recipes follows) *
1 c Thin,diagonally sliced,
Carrots
1 md Onion,cut into chunks
1 cn (16 oz) cut green beans
1 c Sliced fresh mushrooms
LEMON GINGER SAUCE:
1 tb Fresh lemon juice
2 tb Honey
1 tb Dry sherry
1 tb Slivered ginger root
1 cl Garlic,minced
1 ts Cornstarch
Instructions
Slice meat into thin bite-size pieces, cutting across the grain. Combine with cornstarch,sherry, 1 tablespoon oil and the garlic. Marinate for 30 minutes. Prepare Lemon Ginger Sauce; set aside. Heat wok or skillet. Add remaining 1 tablespoon of oil. Stir fry the meat 2 to 3 minutes or just until cooked. Remove from pan; set aside. Add carrot and onion. Stir fry for 2 minutes. Add 1 tablespoon of bean liquid. Cover and steam for 2 minutes or until tender crisp. Add drained beans,mushrooms and Lemon Ginger Sauce. Bring to a boil; cook,stirring constantly, until thickened and translucent. Add meat; heat through. Serve over cooked rice,if desired.Makes 4 servings. LEMON GINGER SAUCE: Combine all ingredients; mix well.
Gingered Chicken
Serving Size: 4
Ingredients
4 each boned and skinned chicken breasts
3 tablespoons butter
4 pieces ginger root, slices -- plus 1 tablespoon of syrup
1 each lemon rind
1 each lemon juice
4 tablespoons sherry
1 cup lettuce -- shredded
1/2 cup green onion -- chopped
1/4 cup croutons
Cut chicken into strips
Melt butter in pan and fry chicken until lightly browned
Add the ginger, ginger syrup, lemon rind, juice and sherry to the pan and bring to the boil
Simmer gently and reduce by about half.
Serve on bed of lettuce and onions, top with croutons and fresh chopped parsley.
Can also be served on a bed of basmati rice.
