What about a glazed carrot recipe? If you need a green veggie then what about some type of spinach casserole or fresh spinach salad like a Betty Salad? love that one!
I am thinking a fresh crunchy salad would go good with your dinner. The Betty salad can be made up ahead of time but you would put your dressing on at the last minute or have people put their own on when at the table.
All recipes are found easily on the web for these things.

Acorn squash-cut in half, scoop out seeds. In the cavity, put some butter and brown sugar. Bake in the oven for about a hour. Delish! Each person should get 1/2 squash. It's different, but tastes not so different so people don't think it's weird.

Try making Scalloped Corn
INGREDIENTS
1 (15 ounce) can creamed corn
1 (15.25 ounce) can whole kernel corn
1 (8 ounce) container sour cream
2 eggs
1/2 cup butter
2 tablespoons white sugar
1 (8.5 ounce) package corn muffin mix
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
Mix together corn, sour cream, eggs, melted butter or margarine, and sugar. Mix in muffin mix. Pour into prepared baking dish.
Bake for 35 to 40 minutes, or until a knife inserted midway into pan comes out clean.

STUFFED EGGPLANT
INGREDIENTS
· 2 (1 pound) eggplants, quartered and cut into 1/2 inch strips
· 2 tablespoons olive oil
· 1 medium onion, chopped
· 3 cloves garlic, minced
· 6 sprigs fresh parsley, chopped
· 1 1/2 cups fresh bread crumbs
· 1/2 cup grated Gruyere cheese
· 2 tablespoons chopped black olives
· 1 tablespoon capers
· 1 lemon, juiced
· 1 teaspoon chopped fresh basil
· 1/4 teaspoon crushed red pepper flakes
· 1 teaspoon salt
· pepper to taste
· 12 slices tomato
· 1/4 cup grated Gruyere cheese
· 4 tablespoons olive oil
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Cut eggplant in half, scoop out the pulp, leaving a 1/2 inch shell. Chop the flesh finely.
2. Heat 2 tablespoons olive oil in a skillet over medium heat. Cook chopped eggplant for about 1 minute. Stir in onion, garlic, and parsley, and cook until tender. Transfer to a large bowl, and mix in bread crumbs, 1/2 cup Gruyere, chopped olives, capers, and lemon juice. Season with basil, pepper flakes, salt, and pepper. Stuff into eggplant shells.
3. Top stuffed eggplants with overlapping slices of tomato. Sprinkle evenly with remaining 1/4 cup cheese, and drizzle with remaining 4 tablespoons olive oil. Place on baking sheet.
4. Bake in preheated oven for 30 minutes.
Sooooooooooo good!!!!
How about brussel sprouts? Saute them with olive oil and butter and then toss them with a little balsamic vinegar. Very tasty.
Or asparagus roasted in the oven...just sprinkle a little olive oil on and bake them in the oven around 350 until tender.
And if you want to make your meal a little more elegant, replace the mashed potatoes with roasted red potatoes.

You can replace the GB's with another green or colorfull vegie. Fruit salads don't hurt none... Or make variants of the other dishes; (ie; garlic tatos or cheese tatos; smashed califlowr as a no-starch sub)

How about some steamed veggies and toss them with a lemon or garlic infused olive oil and sprinkle a little Parmesan cheese on them at the end.
