I learned this one cooking for a daycare center..
Tatertot Casserole
1 bag tatertots
1 pound ground beef - browned
1 can soup of choice - i use cream of mushroom, or cream of celery
about 2 cups shredded cheese
layer the tatertots, beef and shredded cheese in an ungreased casserole dish,
in a seperate bowl mix the soup like you would if you were heating it, adding the milk or water, so that it's smooth and then pour the soup over the entire casserole.
cover with foil and bake for about an hour on 375, until it's hot and bubbling all thru.
serve with ketchup for the little ones or sour cream for a different taste
this is a great versatile recipe cuz if you change the soup or the toppings it changes the whole taste, experiment and try salsa or broccoli soup.
hope this helps, prep time is really only as long as browning the meat.

This was a hit at my house this past weekend and the kids (5 & 10) were able to help. We used ham, scrambled eggs and cheese but my neighbor also has used pizza toppings.
1 can Grands Homestyle Biscuts
What ever fillings you want
Seperate the biscuts and allow to sit for about 5-10 minutes. Press out the biscuts so they are flat (about 6-8 inches). Place fillings in the middle so that there is about 1/2 in left. Fold over and press together with a fork. Bake at temp and time indicated on biscut tube. ENJOY!
Leftovers can be refrigerated and reheated for about 30-45 seconds in the microwave.

I highly recommend Rachael Ray's 30 Minute Meal cookbooks. You may not like every recipe, but she's got great ideas that are fast and pretty easy. Make sure you have a pantry full of staples, such as marinated red bell peppers, artichoke hearts, pasta, pasta sauce, ground turkey (in the freezer). Sometimes just roasting some asparagus in the oven and serving with rice (microwave rice from Trader Joe's is great, if you have one) and pan sauteed salmon is perfect! Hope this helps.

I am all for the slow cookers. You can make soups or stew but also roasts or spaghetti sauces. Then add bread or sides to make it into a meal. Also can freeze half of it so you aren't eating the same thing every day!
Fix it and Forget it cookbooks are great and give portions & some nutritional info.

Chilidog Casserole
4 hot dogs cut into bite size discs
4 buns torn into bite size peices
1 can hot dog chili
shredded cheddar cheese
mustard
Butter a casserole. Cover the bottom with torn up buns. Evenly distrubute all the hot dog pieces. Cover with chili. Drizzle some mustard. Cover with cheese. Bake for 20-25 minutes at 375.
