I'm making chicken marsala w/ garlic pasta. I need the perfect wine to go with this meal. Does anyone know?

Thanks!

I would recommend a nice Merlot. Merlot is a smooth, dry red wine. It is often described as having the flavors of boysenberry, black cherry, herbs, and mocha. Merlot is best with poultry and grilled meats, but actually goes well with most foods.

Some of my favorite Merlot:

Bonterra 2004 Organically Grown Merlot - $14.79
Casa Lapostolle 2004 Cuvee Alexandre Merlot - $19.99
Columbia Crest 2003 Grand Estates Merlot - $14.99
Hogue 2003 Genesis Merlot - $16.99
Twomey 2002 - $64.99
William Hill 2003 Merlot - $19.79

Marsala is a red Italian dessert wine. It's incredibly sweet, but I've noticed when it's cooked down it almost develops a tangy flavor as well. I would recommend a cabernet or merlot. Clos Du Bois makes an affordable one that tastes great, too. There's also a really great brand called Bonterra, it's organic and they also make a syrah and a cabernet (probably more, but those are the ones that I know of). They're both fairly spicy, but smooth.

Hard to pick a wine with Marsala because you don't want to kill the palate of the sauce with another wine.

Try a Pinot Grigio if you're serving with pasta and chicken under most circumstances.

Pinot or Zin...b/c of the garlic pasta.

Fruity white with marsala and garlic pasta will wash out the sauce.

Also...don't use the dessert version of Marsala wine...as posted above...use the dry version.

Also....I highly recommend adding some dried mushrooms (porcini) to the dish...it will help fortify the sauce.

Good luck!

When at Olive Garden, I usually get a dry white wine, just personal preference. However - I have been looking for a good recipe for chicken marsala - would it be to much trouble to send me your recipe? I would really appreciate it. Thanks - If you don't have time right now, I understand. Merry Christmas and enjoy your meal!!!

Go with a nice sparkler. Chandon or Segura Viudas the bubbles in the wine will help keep your palate fresh while enjoying the meal.

I answered this for someone else yesterday, tho they were asking about beef -

I came across some holiday wine/meal recommendations here

and they had a pretty good book on wine/meal matches here

If you're still learning about wine, I recommend Ithaca wine country (that's how I found this site/good article about an inexpensive local trip if you're in the NYC/NY State area).

A nice Pinot Grigio. The rule of thumb is, red with red meat, white with white meat. However, the best rule is, whatever wine you like, will go perfectly with your meal.

I would go with something like white zinfandel
Rule of thumb is to serve a white wine with fish and poultry and to serve red wine with red meats
