Seriously I am not a great cook but this tomato sauce is sooooo good. My friend went to culinary school and this is what he taught me!
In a large sautee pan heat up some olive oil (enough to coat the bottom of the pan) throw in some fresh chopped garlic and onion (we use red onion but I don't think it really matters) we do a lot of garlic and a little onion but this is your sauce so it's up to you. Toss in some italian seasoning and some of those red pepper things that you put on pizza and let em sautee for a few minutes until your garlic and onion are nice and soft but not very dark. then just throw in a can or 2 of tomato paste and 2 or 3 cans of tomato sauce and let it simmer for an hour or two (the simmering takes away the acidic taste of the tomato sauce so let it go till it tastes good to you) I like to add in some black olives and sundried tomatoes while it's simmering but you don't have to if you don't want to and if I'm feelin real fancy I'll slice up some mushrooms and roasted peppers (in a jar in any supermarket) and toss them in and if you wanna make it a meat sauce just brown your fave meat and throw it in there too- It's all about what you like once you have a good base!

Basic Tomato Sauce

Makes 4 cups

Ingredients:

1/4 cup extra-virgin olive oil
1 Spanish onion, chopped into 1/4-inch dice
4 garlic cloves, peeled and thinly sliced
3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
1/2 medium carrot, finely shredded
2 28-ounce cans peeled whole tomatoes, crushed by hand and juices reserved
Salt to taste

Preparation:

In a 3-quart saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and light golden brown, about 8 to 10 minutes. Add the thyme and the carrot and cook 5 minutes more, until the carrot is quite soft. Add the tomatoes and juice and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes until as thick as hot cereal. Season with salt and serve. This sauce holds one week in the refrigerator or up to 6 months in the freezer.

"Quick and Easy Tomato Sauce" - 5 1/2 cups

2 tbsp. olive oil
2 cloves garlic; chopped
2 (28 oz.) cans plum tomatoes
2 tbsp. dark brown sugar
1 tsp. salt
1/2 tsp. fresh ground pepper
2 tsp. lemon zest
1/4 cup heavy cream

Heat olive oil in large saucepan over medium heat until hot. Add garlic; cook until golden. Add tomatoes, sugar, salt and pepper; continue to cook, covered, stirring occasionally, until sauce slightly thickens - about 35 minutes. Lightly crush tomatoes using potato masher; stir in lemon zest and heavy cream. Reduce heat to low; continue to cook about 5 minutes more. Use immediately or freeze.
To freeze, cool tomato sauce completely and transfer to an airtight container. Freeze for up to 2 months.

I make my own, but it's always made differently... try foodnetwork.com...they have tons from easy to more challenging.
