Jack, although that is a very intelligent answer, and it's obivous that you have invested in higher education, I think I will hold out for some more thoughts on this rather heavy subject. :)

I have never had my crisco turn pink, I have had it turn a brownish yellow. There should be a date on either the lid or bottom of the container. You should either use it or throw it by this date. Shortening like everything else gets old and unable to use. At least once a year you should go through your pantry and throw out everything that has passed it's experation date.

The shelf life of a shortening or oil product depends a great deal on how it has been stored and handled. For the best results, Crisco products should be stored in a cool, dry place away from strong odors, direct sunlight, and sources of heat (stoves, dishwashers, and refrigerators).

Shelf life for Crisco in a can: UNOPENED: 2 years from the manufacture date.

OPENED: 1 year.

The manufacturing code is the date the product was made. It might look something like this:
4 122 420 0321.

The first number represents the year it was made. For instance, the 4 in our example code means it was made in 2004. A number 3 would mean it was made in 2003, 2 in 2002, and so on.

Gender preference. At some point in a can of Crisco's life span, it gains insight into its sexuality. It usually happens around 12-14 years old. By any chance, is that how old your Crisco is?

Jack, that was adorable. Crisco goes bad a lot faster if you store it somewhere warm or freeze it. Rather than oil, I would suggest butter or bakers white margarine. :)
