If I want to make it for 12 people, do I simply times the ingredient list by 12? I thought I would, but then realised that 12 garlic cloves and 36 spring onions, seemed ridiculous! Any ideas? Help!

Yes you will need to times all the ingredients by 12 otherwise you will end up with a fairly bland dish that is mostly rice. It does seem a little scary when you add up the total ingredients but as a previous poster said 'imagine 12 individual dishes thrown into a pan'
Good luck and make sure you try out the recipe befor the big day (a single portion size not 12 portion size!)
Also on the day you may want to cook it in two pans as 12 is an awful lot of risotto for one pan.

Its fine to multiply everything by 12 - its like if you chucked 12 plates of indivdual risotto that tastes fine by itself, then the whole pot would contain 12 garlic cloves, 36 spring onions, but it would all taste the same, just a lot more of it. It only sounds scary because you are cooking restaurant sized portions, not your usual 2 or 4 portions.

All recipes are proportional in their nature. Alter the proportions and you will alter the flavour and the way the ingredients react chemically with each other.

Might be rediculous, but if you end up with 12 cloves of garlic, what is the problem?

I would multiply the other ingredients by 12, and just double or triple the garlic and onions, depending upon taste.
I would not wait until the last day to try this, experiment with the recipe now to get the taste you want (RIGHT IT DOWN EACH TIME) when you get the flavor/taste you want, use that one

Jamie Oliver has some great Risotto recipies for 6 in his Jamies Italy book. You could simply multiply this by 2!

Otherwise, yes, you really do need 12 lots of everything!

I'd times the rice by 12 but the other ingredients by 5.

I eat 12 garlick cloves on my own and I don't feel ridiculous although my breath might smell a little :)
Seriously, if multiplying by 12 feels unconfortable just cook it for one person then repeat 12 times lol.

If you can't get the taste perfect then make 2 risottos - might be more balanced. Serve it in two separate dishes because you prob can't get it all in one dish anyway. Nobody will even know. Hope it goes well.

If you have a recipe for 1then it is logical that you add the same ingredients for another 11 people.

well then don't make it for 12. double check your recipe those qualities do sound silly
