What have I done wrong?
The cake is always completely cold before I start.
It happens wether the topping is butter icing or glace. The cake is delicious regardless, but I wish it didn't happen. Any suggestions please?

You put a thin layer of frosting all over the cake. It will be full of crumbs from the cake, but that is alright. You then put the cake in the refirgerator for awhile and let the first thin layer of icing get hard. Then you put the final layer on, and you won't have a problem with the crumbs getting in the way.

Make sure you aren't pulling back towards yourself when spreading the icing. When you pull back, it tears the cake. Also, try to spread the icing all the way to the edge of the cake, lifting the spatula can also tear the cake. I used to work in a bakery, and when I started decorating cakes I had the same problem.

let the frosting get to room temp, and if your adding oil, cut it in half and add 1 more egg.
during hard times i found a tblsp of mayonaise substituted for 1-2 eggs in a 3 egg mix makes a supermoist cake. but ive toned it back to around 3/4 tbsp (its the oil shhhh! its a secret) because my cakes used to crumble when you served them
hey what do i know, im a single full time dad. i do make atleast 3 cakes a yr. and they are good, if slightly ugly. last was a 2 layer 9 inch round.(learning to teach my 2 daughters and son)

Make sure you brush all loose crumbs off cake and that it is smooth. If you find that your frosting is very thick and your cake fragile put a few extra drops of liquid in frosting to make it creamier.
