Egg fried rice.

Cook required amount of rice according to pack instructions. Meanwhile in a wok/large pan fry some garlic and onion using Low Cal spray, add some defrosted King prawns (could use small Prawns, chicken or any meat if preferred). Add a couple of teaspoons of red curry paste, a tablespoon of soy sauce, stir in rice and some frozen peas/petit pois. Mix round thoroughly, then move all the mixture to one side and add a beaten egg. Stir the egg until it looks like scrambled egg, then stir though rice mixture.

Enjoy!

stir fries i often go to the supermarket and buy the packets from the reduced section and then add some noodles or rice and a sweet chilli sauce great energy boost. The advantage is that you can freeze them and then just cook them from frozen simple meal in minutes. Hope this helps

Cheese and Lentil loaf (yes, I know it's a veggie recipe but you could put bacon in it if you want)

6oz red lentils
12fl oz water
40z grated cheese
1 onion, peeled and finely chopped
1 tbsp parsley
1/2 tsp cayenne pepper
drop of lemon juice
1 large egg
3tbsp single cream
salt and pepper
1 tsp marg or butter

Preheat oven to Gas 5/375F/190C.
Pick over lentils, rinse and cook in tightly covered pan for 10-15 mins to a stiff puree.
Remove from heat, add cheese, onion, parsley, cayenne, lemon and season to taste.
In separate bowl, lightly beat egg, stir in cream and pour over lentil mix.
Grease 1lb loaf tin with butter/marge and press in mixture.
Bake for 40-45 mins.
Serve hot or cold.

Enjoy.

Pasta with pesto. Boil the pasta and then mix it with a tablespoon of pesto (or however much you like) Add some chopped vegetables- fried mushrooms, onion and pepper go well.

Or you could try a rice salad hot or cold. Tomatoes, cucumber and sweetcorn go well.
