Ingredients:-

-1 cup Carnation Milk Powder
-1/2 cup Bisquick - Pancake mix (Instead of Bisquick Pancake mix, use 1/2 cup all purpose flour and 1/2 tsp baking soda)
-2 tablespoons butter -melted
-Whole milk just enough to make the dough
-2 cups Sugar
-1 cup water
-Oil for frying

Method:-

1) Make the dough by combining the milk powder, Bisquick, butter. Add just enough whole milk to make a medium-hard dough. Divide the dough into 18-20 portions. Make balls by gently rolling each portion between your palms into a smooth ball. Place the balls on a plate. Cover with a damp yet dry kitchen towel.

2) Heat the oil on high and then lower the heat to medium. Slip in the balls into the hot oil from the side of the pan, one by one. They will sink to the bottom of the pan, but do not try to move them. Instead, gently shake the pan to keep the balls from browning on just one side. After about 5 mins, the balls will rise to the surface. The Gulab Jamuns should rise slowly to the top if the temperature is just right. Now they must be gently and constantly agitated to ensure even browning on all sides.

3) If the temperature of the oil is too high then the gulab jamuns will tend to break. So adjust the temperature to ensure that the gulab jamuns do not break or cook too quickly.

4) The balls must be fried very slowly under medium temperatures. This will ensure complete cooking from inside and even browning.

5) The syrup should be made earlier and kept warm. To make the hot sugar syrup add mix the 2 cups of sugar to 1 cup of water. Add 4-5 cardamom pods, slightly crushed and a few strands of "Kesar". Mix with a spoon and then heat at medium heat for 5-10 minutes until sugar is all dissolved in water. Do not overheat, that will caramelize the sugar.

6) Transfer this hot syrup into a Corning serving dish. Keep warm on stove. Add the fried gulab jamuns directly into the warm syrup. Leave gulab jamuns in syrup overnight for best results. They can be served warm or at room temperature.

Gulab Jamun Recipe
Milkballs in Sweet Syrup

Make a syrup by boiling together until the sugar dissolves:
3 cups sugar
7 cups water
Turn off the heat and add:
2 teaspons cardamom powder
1/4 teaspoon saffron
Set the syrup aside in the saucepan on the stove.
Mix by hand in a bowl:
2 cups powdered milk
2/3 cup all-purpose flour
1 teaspoon baking soda
Gradually mix in to form a soft dough (only slightly sticky):
1 1/2 cups (or less) heavy cream
Make into walnut sized balls (you may use a small amount of cream on your hands while rolling) set aside and cover with a damp cloth.
Heat in a deep frying pan or wok:
4 cups vegetable oil
Add the milkballs a few at a time in a basket. Fry to an even dark brown, shaking the basket continously. (Adjust the heat so they don't get dark any sooner than 5-7 minutes.) When browned, drain the oil off the milkballs, dip them into the syrup, then transfer onto a serving dish. (Re-boil the syrup between batches to keep the thickening process happening.)
After all the balls have been prepared, boil the syrup again for about 15 minutes, until thicker, and pour over the milkballs. Let the syrup soak in for a few hours before serving.
Serve hot or cold. This may be re-heated from the refrigerator (or freezer) by pouring hot syrup over the (defrosted) milkballs. They may also be topped with whipped cream.

Gulab jaman

Ingredients:
Gulab jaman:- 1 cup milk powder 200-300mL fresh cream 1 tsp baking powder Oil for frying 1 cup sugar 4 cups water 2-3 cardamon pods


Description:
Heat oil on med-low heat. Combine milk powder and baking powder. Gradually add cream until mixture becomes hard enough to roll into balls. Roll into very small balls (approx. 1cm wide). Fry in oil until balls float and are evenly browned (not burnt). Place straight into syrup. Sugar syrup:- Heat sugar and water until boiling. Reduce heat to low and simmer for 20-30 minutes.

I have these two recipes i.e. Gulab Jamun (Khoya) and Gulab Jamun (Using Pancake Mix).Chioce is urs:
Gulab Jamun (Khoya)
INGREDIENTS:
30 gms. Indian Cottage Cheese
1½ tbsps. All Purpose Flour
150 gms. Dry Milk
Vegetable Oil for frying
¼ tsp. Baking Soda
300 gms. Sugar
DIRECTIONS:Mix Khoya, Chenna, soda bi-carb and a little water to make it into a soft dough.
Divide into 10 equal portions. Shape into small balls (these balls can be stuffed with saffron and khoya).
Dissolve sugar with equal quantity of water and bring to a boil. Keep stirring till the syrup thikens. Set aside.
Heat oil in a Kadai. Deep fry prepared balls on a slow flame (else gulab jamuns will remain uncooked from inside) till golden in color.
As the balls turn golden brown, remove them and drop them into the warm sugar syrup for 15-20 minutes.
Gulab Jamun (Using Pancake Mix)
INGREDIENTS:
Non fat dry Milk 1 cup
Pancake mix (Bisquick) 1/4 cup
Wheat Flour 1/4 cup
Heavy Whipping Cream to knead
Oil to fry
Sugar 2 cups
Cardomom Powder 1/4 tsp
DIRECTIONS:Seive milk powder, pancake mix, cardomom powder and wheat flour and knead it with the help of whipping cream. The kneaded dough should be as soft as chapati dough. Set it aside for about 1 hour to have soft Gulab Jamuns.
Dissolve sugar with equal quantity of water and bring to a boil. Keep stirring till the syrup thickens. Set aside.
Then make small equal sized balls of the dough. You should be able to get 12-14 balls with the ingredient quantities mentioned on this recipe.
Optionally, these balls can be stuffed with saffron and khoya.
Heat oil in a frying pan. Deep fry prepared balls on a slow heat (else Gulab Jamuns will remain uncooked from inside).
As the balls turn golden brown, remove them and drop them into the warm sugar syrup for 15-20 minutes.

Why r u breaing u r head//////////////// Pl buy ready made gulab jamun mix pacets from reputed companies such as ' ORAY, MTR, ' etc. Instructions r given in that. follow it. make wonderful jamuns.
If u r paticular in making it at home, the mix ........
1 cup maida 1 cup unsweetened KHOVA / available in leading dept shops. mix it with little water say quarter cup. make small balls . deep fry in oil. then add it in sugar syrup. 2 cup sugar 6 cup water to make syrup. . add rose essence or cardamom.

take a bowl and drop some rose leaves in it and add some jamun .mix both the ingredints firmly, mix it till 5 minutes.now the dish u made is gulabjamun

tricks....... when u make balls....... try to apply ghee often........... dont press it too hard...... dont keep it in open place like under fan..... keep it close....... ur way of making the balls round matters here...... dont fit small amounts of dough into the ball because the ball has some holes when ur rotating it in hands........ add lot of ghee.............
