It is normally made from lean ground beef. I have never heard of using hearts. It sounds like someone watched the Texas Chainsaw Massacre. Chili got a lot of bad hype after that movie came out. Then there was the Wendy's finger in the chili issue, but that was also false. Chili contains natural ingedients like onions, tomatoes, kidney beans, chili powder, garlic, and beef.

I think there's as many ways to make chili as there are chili makers. We have big chili making contests in my town that are quite the big deal. I once attended a chili and scotch tasting party - all the geek engineers where I worked were trying to outdo each other with either very spicy, or very unchili-like ingredients while maintaining a chili-like flavor and texture. One chili was supposed to have coffee grounds in it.
I avoided all the chili at that party (I knew these guys too well to eat any thing they had cooked) but the scotch was quite tasty! The aftermath of that party was sure ugly tho ...(shudder)...

Beef heart in the chili at Coney Island...and we all thought hot dogs were gross...

I make mine out of ground beef, onions, tomatoes, and red beans. I skip the chili powder as I do not like it.

I'm 42 years old and lived in Michigan all my life. This is the first I've heard of that rumor!

Good chili is made from ground pork(pork shoulder)and never sees a tomato or tomato product. That would be yankee chili.
