I've got a roast lamb i'm about to cook. I took it out to defrost not yesterday but the day before. It feels slimey and the blood has drained to the bottom of the bag. The meat doesn't look as red as it usually would.. Is it ok to cook still? There doesn't seem to be any bad smell...

if it doesnt smell sickly it will be fine. the cooking process will sort it out, and the aging process will actually make the meat tender. I know people who hang meat under muslin clothe in the shed and wait till it is slimy through that. yuk, but the meat is soooo tender.

I cooked some lamb last week like that, and it was just starting to smell, but the meat was awesome.

that is a hard one if I can't see it. The blood thing is no big deal. The slimey part can be rinsed. If there is no bad smell, which is a huge indicator of bad meat. I would say your ok, but it all comes down to what you think. There evidinetly was some concern on your part. The color can be lost due to oxidation, kind of a faded red. The green sheen is due to Oxidation, not a big deal there either.

when you leave the meat out, the blood drains away. if it smells good, and the colour is pinkish not greenish, it is still ok to cook.


than simply don't cook it. if it turned greenish don't even be bothered about it.

If in doubt, chuck it out. No point giving yourself or anybody else dodgy bellies...... life is too short.
