Cheese is made with yeast or other cultures that grows mould. This is ok if it is a natural cheese [not processed such as american or velveeta] . Trim off and discard the mouldy part and it is ok to eat.

Cheese is a dairy product, and it grows mould, just like milk goes sour. The older it is the moulder it gets. Some people will actually pay money for green cheese. When it gets mouldy slice off the old part, the outside of the cheese, the inside is still good. This type of mould grows from the outside in.

the fridge only slows the breeding life cycle process of bacteria, it doesnt kill it. the cold slows down metabolism of germs and thats why food lasts longer, but not for ever.

it is the bacteria transfered from your fingers to the cheese, or if you haven t touched it, it is the bacteria from the packers of that cheese.
