If you have two things, a valid license to drive, and their permission. Insurance follows the car, not the driver, so your status of being insured on your parent's policy is beside the point.

You should be good in Quebec, I think even in the States is fine too. The car you are driving has to be insured (so I guess your girlfriend's parents car) check with their insurance company to be safe and your good to go. I don't think that the fact that you have insurance on another car matters.
