I know this is sort-of vague, but I need quick help in quickly locating a couple of passages in the Bible that I've read, I just can't find right now. Do you know where, after the crucifiction, Jesus appeared to some of his disciples in a town and they didn't recognize Him? Also, I believe He also stated once that someone else was previously known by another name? If anyone knows what I'm talking about, could you tell me where to find those two things (or at least one)? Thanks!

or was it Saul of tarsus who held the cloaks of those at the stoning of Stephen, the first martyr, who later became the Apostle Paul after his vision of Jesus on the road?

I think the answer to the first part is in the beginning of Acts.
There are quite a few who were given different names.... do you mean Saul who became Paul?

John 20:14-18
Now when she had said this, she turned around and saw Jesus standing there, and did not know that it was Jesus. Jesus said to her, "Woman, why are you weeping? Whom are you seeking?" She, supposing Him to be the gardener, said to Him, "Sir, if You have carried Him away, tell me where You have laid Him, and I will take Him away." Jesus said to her, "Mary!" She turned and said to Him, "Rabboni!" (which is to say, Teacher). Jesus said to her, "Do not cling to Me, for I have not yet ascended to My Father; but go to My brethren and say to them, 'I am ascending to My Father and your Father, and to My God and your God.' " Mary Magdalene came and told the disciples that she had seen the Lord, and that He had spoken these things to her.

I think it was one of his disciples that once went by another name. I can't remember either but, know what you are speaking of. I think both of these are in the same book. I am not sure. James comes to my mind,
