During the times of the old testament tithes would have been in the form of services for the community rather than money. A carpenter for example may have spent 1/2 a day per week repairing the church or helping a family in need of a carpenter.
It was more of a communal camaraderie, too bad it seems to be more about money and power today.

No one took care of them so to speak, Abraham paid tithe to Melchezidek and after the law was introduced, the tithe was paid to the high priest. This was used to support him, as it should still be today.

When you say 'who took care of the tithes' do you mean who they were paid to? If that is your question, I believe in the O.T. tithes were paid to the priest.....Now you pay (at least I do) your tithes(10% of your income) to the church and your Pastor.

Usually a man with the Priesthood would have collected tithing, so I would assume that worthy members of the tribe of Levi were appointed to collect it.

the other tribes were given properties , these tribes were told to give a tenth of their prosperity to the levites to live on
