My cookies keep on "falling" and going flat. I follow the recipie. could it be the brand of flour? any tips for having great chrismas cookies?

You're oven may be too hot. The sugar and butter are melting long before the baking soda and salt and flour have a chance to rise. Lower your oven temp by 25 degrees and test your batches. If you find a temp that works, stick with that. Also, purchase an oven thermometer. This sits in your oven and gives you the true temp. The dial on the stove top may not be calibrated.

I tend to agree with the comments about your baking soda... it sounds like you are not getting the proper amount of levening. Also overmixing can wreak havoc on certain cookie recipes like Ladyfingers for example.... it could be your flour, altitude? Try a new bag of flour and new baking soda or baking powder, if this fails it could be your oven's calibration, which you can fix with an oven thermometer which is a LOT less expensive than having it re-calibrated. Your cookies are under baked, try to bake a batch a bit longer & test those, good luck.

Your flour may be too old, or your margerine is too soft, or even the baking soda. If baking soda is old and not fresh, it can really affect baking.

You could be overbeating - just beat until all ingredients are incorporated. I have taller cookies when using real butter or Crisco shortening.
