Hi John...consider using double-sided sticky tape to prevent counter surfing or on any other surfaces when you are not available to supervise your kitty's undesirable behaviour. Cats dislike having their paws stuck to the tape and after after a few attempts will learn to avoid areas which are unpleasant.

My stubborn 8 yr old cat still gives it a try when she thinks I'm not looking. She is the most stubborn cat I ever had and we usually have more than 2.

Remedies to try:
1) Squirt-bottle or squirt gun with water something that won't leak and has at least a 5 foot range. Squirt him when ever he jumps up there, not in the face.
2) Soft-drink/Soda can with rocks, taped shut. Rattle it when they jump up. If that doesn't work, the other extreme is to jump up run at them rattling the can, stomping your feet, waving your arms and shouting at them. (After a night of that, I was so tired that I finally threw the can at a point near the cat, giving her the impression that I was trying to hit her.)

These were the 2 most effective tricks. Now, when I see her, I call our her name and she jumps down, unless she is feeling ornery, then I also have to hiss. She goes months without jumping up. But if she is really out to steal something, I have to run at her or grab the can, if I remember, but that has only happened 4 times in the past 5 years.

Note to normal-cat owners: These are a last resort. Start with an authoritative voice and firm words, you are in charge. If that doesn't work, add a gentle push in the right direction. The usual reaction to a swat or striking a cat is; resentment and a rebellious 180 back up on the counter. Those that resist this, usually react to the rattling can. For most, squirting water is a last resort. But for the extreme cat, charging-wild-woman with a flying-can had the best effect. I've heard of putting HOT hotsauce on places that you don't want them to scratch, but that didn't work on my kitchen counter problem. Neither did double stick tape though tape was hilarious (until she removed it with her mouth and she was barfing it up, it's not non-toxic). Do not spray repellents on kitchen counters, most are dangerous in your food.

Something that will make lots of noise the second he jumps up there. I used a mousetrap in a sack. Of course I made sure that when the mousetrap was disturbed and closed that it could not hurt or pinch the cat. There are all sorts of motion activated alarms that you can use. The sprays seldom work...but they are inexpensive...so I guess worth a try. If you use a squrt bottle of water and spray him when he jumps on the counter it might slow him down from it...but it will take persistance to stop it altogether.

Oil those counters up for a couple days and make sure that everything breakable has been removed. You can also mix a little hot sauce or powdered cayenne pepper to the mix, all that slippin and slidin' and then the cats licking their paws will solve your problem. And neither will harm your cats.

It may sound mean, but fill a spray bottle with water. Generally cats hate water, when your cat jumps up on the counter squirt him in the face with the spray bottle, he'll quit.
I do like Seattle's answer. Cat's do hate tape on their paws. It is hilarious to see them. He'll jump straight up in the air and shake his paws with each step.

Water botte every time and a Sharp NO! that does it . We had an older cat that belonged to MIL who taught the male bad manners and he learned real quick when liveing with us No ment NO! All I had to do with the bottle is threatened after awhile.He would pop right down.

Buy a Super Soaker and spray her when ever she gets on the counter.

line the counters with foil for about a week. He will jump up on them and hate the feel, sound, smell, sight, everything and just give up on getting up there.

Use a spray bottle with water in it. Eventually it will get sick of getting soaked and get the idea that you don't want it up there.
