A potato grows because the potato plant is spending its summer storing nutrients underground. It lies dormant through the winter, then in the spring uses the energy stored in the potato to fuel the growth of its shoot system.

So when you eat a potato you are eating most of the energy that the plant produced over an entire season. That's why potatoes are such a good source of carbohydrates.
