My stair steps are MDF and I would like to have wood finish what is the best way to do this without having to replace the steps and risers. The steps have a bullnose.

It can't be done. and floating floors are not used on stairs because they expand, (that's why you leave a gap around the edge ) If you want to keep a bullnose on the stairs you can't apply wood veneer to them. Your best solution is to replace the treads with hardwood and leave the risers. You could have painted risers and wood steps. If you were to apply wood over the MDF it would change the steps width and height. making walking up and down them awkward and dangerous. not to mention where I live they would not pass building codes.
PS Ask any GOOD carpenter he should agree

I was just wondering if floatin floor was anything like a air-hockey table?

I like hard-wooded floors with little carpets on them.

Maybe a veneer? They make some that just kind of iron on now. Ask at your local hardware store, those guys can be pretty helpful.
